PEMBUATAN EDIBLE COATING KITOSAN DARI HASIL SAMPING (LIMBAH) TAMBAK UDANG UNTUK MENJAGA KELESTARIAN GUMUK PASIR PARANGTRITIS

Abstract
Gumuk Pasir Parangtritis is one of the unique and rare places in Indonesia. This Gumuk is located in Depok Beach, Parangtritis, Special Region of Yogyakarta. Over time, this gumuk experienced so much decline in quality / quality. This is indicated by the reduced barchan seen in the sand dune in Parangtritis. Some of the factors that cause this event to occur are the number of vegetation / vegetation that appears, the number of tourists who come to visit, the activities of the surrounding shrimp farms, and other activities that can affect the wind flow rate from sea to land. One of the factors that greatly influences the quality
/ quality degradation is the activity of shrimp ponds, because the waste when the harvesters make the sea water polluted and the ponds inhibit the movement of sea water. In an effort to reduce environmental pollution, edible coatings were developed to maximize utilization of shrimp waste, introduce environmentally friendly plastics, and maintain the sustainability of Parangtritis Sand Gumuk. Chitosan is obtained through deproteinization, demineralization, depigmentation, and chitin deacetylation. The next stage is the manufacture of edible coating by dissolving chitosan in acid solvents with the addition of plasticizers, and continued with printing and cooling. This edible coating is applied as a coating on fresh fruits, meat products, sausages and other food products. The adssssvantages of edible coatings are biodegradable, edible, and have anti-microbial activities. With the addition of chitosan edible coating from shrimp pond waste, it is hoped that it can reduce the pollution that occurs in Parangtritis and maintain the sustainability of Parangtritis Sand Gumuk.
